Agua de Jamaica (Iced Hibiscus Tea)


Ingredients

  • 1,440 ml water
  • 40 g dried hibiscus petals (approximately 2 cups)
  • 1 cinnamon stick
  • 300 mg ground cloves (1 pinch)
  • 300 mg ground nutmeg (1 pinch)
  • 300 mg ground allspice (1 pinch)
  • 110 g brown sugar cone
  • 300 g white sugar (approximately 1½ cups)
  • Cold water, to top up the pitcher (about 1–1.5 litres, or to taste)


Method

  1. Bring 1,440 ml of water to a boil in a large saucepan.
  2. Add the dried hibiscus petals, cinnamon stick, ground cloves, nutmeg, and allspice.
  3. Reduce the heat to medium-low and simmer gently for 30–45 minutes, until the liquid becomes a rich, deep ruby red.
  4. Add brown sugar and stir until completely dissolved.
  5. Remove from the heat and allow the mixture to cool for 15 minutes.
  6. Strain the liquid into a large pitcher, discarding the hibiscus petals and spices.
  7. Stir in the 300 g white sugar until fully dissolved.
  8. Add cold water to dilute the concentrate to your preferred strength
  9. Chill well before serving. For the best flavour, refrigerate overnight.
  10. Serve over ice and garnish with fresh lime slices and mint, if desired.


Tips

  • For a lighter, less sweet drink, reduce the white sugar to 150–200 g.
  • Store refrigerated for up to 5 days.
  • This recipe makes approximately 2.5–3 litres of Agua de Jamaica, depending on how much cold water is added. 🌺
